Animated - Stardust

Unfortunately, I got to discover this coffee because Animated was closing shop after roasting for 10 years. I placed an order for any coffee they had that was not dark and did it again. I ended up with way too many bags and I have given a few away to friends and family.

Stardust is a very different one because you can taste the cherry, the beautiful sugar from the fruit it was in. I love it but it is obviously not for everyone.

It is from Colombia in the Finca San Sebastian region from Jose Miller Gutierrez. It is using an anaerobic natural process to bring the flavor that it has. It is from the Caturra plant that is recognized to produce average coffee but I think that it probably motivated them to process it more naturally to allow the sugar from the fruit to give it a different and interesting flavor.
